I just realised that, starting in about 3 weeks, I'll be working full-time AND studying part-time. The study is expected to take up an extra 10hrs/week of my time.
So! I have decided that I will do as much cooking as I can fit in to these holidays and I will count those recipes toward my tally, because I can't guarantee I'll have as much time as I otherwise would. I also need to give myself a few weeks to adjust to the new timetable, and having a few weeks during which I'm not feeling pressured about cooking will probably be a good thing.
So, Recipe #28 was bean burgers! They're better than they sound, I promise :-) They consisted of red kidney beans, chopped mushrooms, onion, and garlic. They also had cumin in them, and I put in thyme instead of coriander (because I can't stand coriander). That's pretty much it! And they were tasty. I served them on buns with cheese, lettuce, tomato and chips. I also added french mustard to mine. Baked some chips as a side dish :-)
I'm qutie pleased with the results!
