Milestone!

So, this week was Recipe #25! I'm half-way :-) Well, almost. Near enough that I ended up doing something a bit more special this time around: I went over to my husband's aunt's house, as she had offered her kitchen with its MASSIVE bench and she also offered to provide the ingredients (because she's awesome like that).
So, the three of us did a two-course meal:
Husband's aunt did the main (marinated steak and a salad)
Husband and I did the side dish (Dauphinois Potatoes)
I did the dessert (Stuffed Baked Apples), which is this week's recipe!

This is the potato dish, before it was cooked. It's basically layers of potato with onions, butter, cheese and cream in between. I've done this one before, but last time I forgot the onion. It's so much better with it! Aunt also provided some rosmeary leaves for the top, and that worked really well too.

This is what the main looked like on a plate! Not the golden brown potatoes. Her oven has this function where it grills at the same time as heating, which is great for things like pasta bakes. Unfortuantely, an oven like this means you really need the manual to be sure you've got the right settings because it has so many!

And these, my friends, are the baked apples! Granny smiths with a mix of honey, ginger, maple syrup, sultanas, oats and apricot in the middle :-) There's this weird thing with baking them in that you have to fill the dish with enough water to get up to 1/3 the height of the apples. Does anyone know what that's supposed to do? I'm sure it's not to keep them from exploding - that's what scoring around the middle was for. Any ideas?
So, the meal was a success! :-) Next time I wouldn't include the ginger, and I'd include almonds or walnuts. We decided against them this time becuase my father-in-law doesn't eat nuts, and he was joining us.
