Recipe #22 is Pizza Muffins! I got them from the Women's Weekly small book of Snazzy Snacks, shown here:



They involve bacon, spring onion, roast capsicum from a jar, butter, mozzarella cheese and self-raising flour.









This is what the mixture looked like before it went into the oven:

The recipe called for buttermilk, but I couldn't find any so I substituted skim milk. I might add some salt next time as well. They're wonderfully savoury, but I think they could stand to be a little more salty :-)

My taste testers (who came all the way from Bendigo!) were happy with them, and so am I!

Recipe #23 happened by chance tonight because I wanted dinner and didn't want leftovers, nor did I want to go out. I also wanted a greater variety leftovers I could use for school lunches. So, I looked into my little Italian recipe book and decided on a mushroom risotto. I also added a twist: Kangaroo fillet. I cut the fillet into little chunks and cooked it briefly before adding the mushrooms.

It was extremely tasty. Things I'd modify next time:

- Add some porcini mushrooms
- Salt the red meat before adding it to the pot

But over all I'm happy with it. I'll hold this one in reserve in case I have a particularly busy week and don't have time to cook something.
